Making of a Feast

I am very excited about my life! We had a joyful Thanksgiving feast with family and I really had a blast making all the yummy foods that I shared.

First, on the day before, I took the bountiful vegetables that we had, cabbage, sweet potato, celeriac, carrots, parsnips, and onions and I made a stock. The large pot we have was nearly brimming with these tasty morsels. After an hour or so, I took half the veggies and stock and put them in another large pot. The rest I let stay below simmer on the back burner for a while longer.

Next came the afternoon soup, a lovely new creation with tomato, rosemary, dill, and other lovely spices along with all the vegetables and stock I put in the new pot. It came out quite lovely!

After that was done, my stock was ready. I drained the stock and froze it for the next round of whatever I will make, it would be great use for another soup, sauce, or whatever comes to mind.

Well, since I had all these lovely vegetables that were strained from the stock, I decided to use them in my stuffing for Thanksgiving. I also made my usual, mostly, stuffing recipe along with these flavorful veggies. I took a loaf of my sourdough sandwich bread that I made earlier in the week and ElvenTiger and I broke it up into bite size pieces, mixed it with the veggies and added the stuffing liquid, which was filled with savory flavors like sage and marjoram.

Since I had some of that stuffing liquid left over, I decided to save it for the seitan that I made on Thanksgiving morning. There is an au jus-like sauce that the seitan loaf is basted in and the base for that was from the stuffing liquid.

And finally, after the seitan was finished, I took the juice of that and mixed it into the gravy to top the whole thing.

Needless to say, it was delicious!

I wonder if next year I can find a way to incorporate it into the pumpkin pie! Nah, I will leave that to the professional dessert makers aka Starcat. :)

I am filled with gratitude for all of the feasting that I have learned to create and I look forward to even more oven adventures. I am actually quite excited about offering an International Cooking class at the homeschool co-op next session. Plus, Starcat and I are also planning to put out a cookbook of all new simple and yummy vegetarian recipes. Not sure of the timing yet, but I am sure we will let you know!
